Summer is heating up in Sarpy County, and we’ve got the perfect way to celebrate it — Food Truck Fridays at Prairie Queen Elementary! Starting in May and running through September, join your neighbors from Granite Falls, North Shore, Westmont, Ashbury Farms, Founders Ridge, and Kingsbury Hills for a series of fun-filled Friday evenings packed with amazing local food, sweet treats, and a chance to give back. With nearby Werner Park lighting up the rest of your weekend with ballgames and fireworks, it’s the ultimate recipe for a summer to remember.



Food Truck Fridays at Prairie Queen – A Summer Series Supporting Local Heroes!

We’re bringing the flavor and the fun to our community this summer with Food Truck Fridays at Prairie Queen Elementary – and you’re invited! Mark your calendars for the 4th Friday of every month from May through September, because from 5:00 to 7:00 PM, the kid drop-off zone at Prairie Queen will be transformed into a delicious hub of food, friends, and fundraising.

Each month, we’ll feature a rotating lineup of local food trucks serving up everything from BBQ to tacos, burgers, sweet treats, and more. It’s a perfect way to wind down your week, enjoy some amazing eats, and connect with neighbors from Granite Falls, North Shore, Westmont, Ashbury Farms, Founders Ridge, and Kingsbury Hills.

Why we’re doing this: This isn’t just about great food — it’s about giving back. A portion of the proceeds from each event will go to local nonprofits that are making a big difference right here in our community:

  • 50 Mile March: Supporting veterans and raising awareness for veteran suicide prevention, this incredible organization takes on a grueling 50-mile walk to shine a light on the struggles many veterans face after service.
  • Moving Veterans Forward: Dedicated to helping homeless veterans in Nebraska get back on their feet, this nonprofit provides housing, furniture, and essentials to those who’ve served our country. I had the opportunity to interview the founder Ron Hernandez and learn more about his story. Watch here!

More Than a Bakery: Jodi’s Mission with Busy Bee

We’re also thrilled to welcome Busy Bee Baking Company at each of our Food Truck Friday events! Owner Jodi Jefferson will be there with a sweet selection of homemade baked goods that are sure to hit the spot. But Jodi’s not just baking for a cause—she’s walking for one, too. As a proud participant in the 50 Mile March, Jodi laces up her shoes each year to help raise awareness and support for veterans struggling with homelessness, PTSD, and suicide. When you grab a cookie (or three!) from Busy Bee, you’re not just treating yourself—you’re standing behind someone who’s walking the walk for our heroes.

While our Food Truck Fridays happen on non-game days, living so close to Werner Park means the fun doesn’t stop when the food trucks roll out. The Omaha Storm Chasers light up the weekend with home games and fireworks shows throughout the summer — perfect for a Friday night out with the family. Extraordinary fireworks will be on display after each of these games:
